Peanut Butter Cookies
My mom used to make these for our school lunches.
I"ve never found a better peanut butter cookie!
Mom really DID know best...

Makes 2 dozen or more cookies


Preheat oven to 375 degrees.

1/4 cup butter
1/4 cup shortening
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 egg
1 1/4 cups flour
1/2 tsp. baking powder
3/4 teaspoon soda
1/4 tsp. salt


Mix the shortenings, sugars, peanut butter, and egg in mixing bowl and beat until well combined & fluffy; about 2 minutes. Scrape the sides and bottom of the bowl well during mixing.

Sift remaining ingredients together. Add to creamed shortening/sugar mixture gradually on slower mixer speed, mixing only until ingredients are incorporated.

*Chill dough. Roll into balls the size of large walnuts. Place 3" apart on lightly greased baking sheet, or baking sheet lined with parchment paper. Flatten in a criss-cross pattern using a fork dipped in flour. Bake about 10 - 12 minutes, until set, but not hard.

*These cookies can be shaped without chilling. Chilled dough is just a little easier to handle. If you decide to refrigerate the dough, however, you run the risk of losing half of it to "tasters", tip-toeing back and forth to the icebox!
